Black Garlic Spaghetti Aglio E Olio  INGREDIENTS kosher salt 1 pack (250 g)  dried spaghetti 1/3 cups olive oil 4 cloves black garlic, chopped 4 cloves garlic, cut into thin slivers 1/2 teaspoon crushed red pepper flakes 1/2 cup minced fresh parsley 1 cup parmesan cheese INSTRUCTIONS - bring a large pot of water to a boil - add 2 tablespoons of salt and the pasta , cook according to the directions on the package - set aside 1 1/2 cups of the pasta cooking water before you drain the pasta - heat the olive oil over medium heat in a pot large enough to hold the pasta - add the fresh garlic and Black Garlic, cook for 2 minutes, stir, until the fresh garlic just begins    to turn golden on the edges. - add the red pepper flakes and cook for 30 seconds more - reserved pasta-cooking water to the garlic and oil and bring to a boil - add 1 teaspoon of salt and simmer for 5 minutes - add the drained pasta to the garlic sauce and toss - remove

Black Garlic Salsa  (salad dressing) 2 lb. Tomatoes, diced 2 fresh jalapeno peppers, seeds removed 1 clove fresh garlic chopped 2 cloves Black Garlic chopped juice from 1/4 lime 2 spoon virgin oil  1/2 tea spoon cilantro, chopped salt - mix all ingredients and mix well

 Black Garlic Potato Soup INGREDIENTS 1000 grams potatoes, peeled and cubed 4 cups vegetable stock 6 cups water 6 cloves  black garlic, pounded to a pasta salt oil for cooking 4 sour dough bread ends - cubed fresh rosemary INSTRUCTIONS - add potatoes to a pot with the other ingredients - simmer on medium heat for 20 minutes - use hand blender to blend the ingredients to a smooth texture - in a pan, heat the oil and add the fresh rosemary - when the rosemary is fragrant, add the cubes of bread, stir and fry until golden - remove the croutons from the pan and serve on top of the soup

Black Garlic with Berry Jam INGREDIENTS 2 cups crushed strawberries 1 cup crushed raspberries 1 cup crushed blackberries 7 cups white sugar 1/4 cup lemon juice 4 cloves black garlic, mashed INSTRUCTIONS - toss berries with white sugar in large pan, let stand - stir occasionally until sugar is mostly dissolved , add black garlic and the lemon juice - bring to boil on high heat and cook for 1-2 minutes - remove from heat, stir  for 5 minutes - pour into jar and cool to room temperature
