SALMON WITH BLACK GARLIC GLAZE

Ingredients
  • 300salmon fillet, halved lengthwise

For the black garlic teriyaki glaze

  • 4 tablespoons light soy sauce
  • 3 tablespoonbrown sugar
  • 2 tablespoonolive oil
  • 3 black garlic cloves (or 3 tablespoons of black garlic paste)
  • 1 tablespoon lemon juice
  • 1 tablespoon of fresh grated ginger
  • Zest of 1 lemon
  • salt & pepper to taste

Optional quick and easy serving sides to go with the salmon:

  • wedges of lemon
  • white rice with some green peas
  • sautéed spinach

Instructions

  1. Season salmon with salt & pepper.
  2. Smash black garlic with a fork until it turns into a rough paste. Add all remaining ingredients and reduce this mixture in a pan on a slow heat so it starts to bubble.
  3. Place your salmon in the pan with the black garlic sauce and fry for about 8-10 minutes (or to your liking), coating it with the sauce during cooking. You can use a lid to speed the process of cooking up.

BLACK GARLIC CAULIFLOWER CHEESE RECIPE Ingredients 1  whole cauliflower head (about  700 g/1/5lbs), core removed and florets separated 100 g salted butter 40 g (5 tablespoons) plain flour – can be all purpose gluten free flour ½ teaspoon  ground cumin ¼ teaspoon  ground nutmeg 350 ml (1 ½ cup) full fat milk 2  bay leaves ½ teaspoon  salt ¼ teaspoon  white pepper (use black if you have no white pepper) 100 g extra mature cheddar, grated 4   Hitara Black Garlic  cloves, smashed into a paste To serve Handful of toasted walnuts Instructions Preheat oven to 180C/356F.
