Black Garlic Potato Soup
INGREDIENTS
1000 grams potatoes, peeled and cubed
4 cups vegetable stock
6 cups water
6 cloves black garlic, pounded to a pasta
salt
oil for cooking
4 sour dough bread ends - cubed
fresh rosemary
INSTRUCTIONS
- add potatoes to a pot with the other ingredients
- simmer on medium heat for 20 minutes
- use hand blender to blend the ingredients to a smooth texture
- in a pan, heat the oil and add the fresh rosemary
- when the rosemary is fragrant, add the cubes of bread, stir and fry until golden
- remove the croutons from the pan and serve on top of the soup
